What do you do when a guy that you've never met before waltzes into your house, with a container of marinated trip-tip, and announces to you that he's here to cook tri-tip?  What are your options?  Treat him like an annoying and unwanted Kirby vacuum salesman and throw him out on his ear?  Call the police?  Politely "just say no?"  Or, in the case of Stefán, invite him in, ask him to join the party, show him the grill, and allow him to take charge?  I chose the latter option, and I'm glad that I did, as Stefán treated me to a whole different outlook on barbecue.

Photo:  Stefán unwraps his tri-tip, that's already marinated and ready for the the grill.  This guy doesn't leave anything to chance.

Stefán is a friend of Casey's, so it was natural that she would invite him over for her 27th birthday party that we were hosting at our house, on Saturday, August 23, 2008.  Like most family get-togethers that we host, necessary ingredients include such items as booze, food, and food especially involves barbecue, and this party was no exception, as we had the grill fired up, albeit just for the humble task of grilling hot dogs.  So in marches Stefán, complete with a tri-tip marinated in teriyaki, complete with rosemary and garlic on the side.  This guy comes loaded for bear.

Photo:  Stefán slices the tri-tip; note the garlic and rosemary placed on the kitchen island that he'll put in the cavity of the tri-tip.

Photo:  Stefán poses beside the grill, with his creation starting to cook.

Picture this:  Stefán brings an already-marinated tri-tip to the house, and sets it on the kitchen island.  Then, he proceeds to whip out fresh garlic and rosemary.  He takes a knife and slices the tri-tip in the middle, and proceeds to place diced garlic and fresh rosemary into the cavity, all the while having animated conversation.  Nice.  Then, its back to the marinade to allow the whole thing to soak a little longer.  Nice touch.  When it comes to tri-tip barbecue, his guy is a professional.

Photo:  Oh yes!  Mesquite smoke, and Stefán's amazing tri-tip.

Next, it's out to the grill, that I had already fired up, as I was in the process of cooking hot dogs.  Please don't underestimate me, as if you've ever surfed this web site, you know that I'm capable of grilling food slightly more sophisticated than hot dogs.  Click on this link if you don't believe me...  Anyway, Stefán placed his trip-tip on the grill, next to the hot dogs and...  well...  I said, "Dude... just take over... forget the hot dogs, as the tri-tip rules."   And he did take over, grill, and the rest is grilling history.

Photo:   Stefán 's tri-tip is almost ready... note the attractive grill marks.  True, I had a small part in the grill marks. The onion half was used to season the grill.

All of our guests raved over Stefán's tri-tip, as it was juicy, delicious, and cooked to perfection.  As a lover of barbecue, I'm always searching for different bbq techniques, and I'm always in the process of attempting to up my bbq ante just a bit.  It's a pleasure to enjoy the company of a guy that's 20 years younger than I am, that has a genre of barbecue mastered, and it's a pleasure not only to learn something from him, but to enjoy a delicious bbq meal.

Photo:  Here it is, Stefán's tri-tip, delicious, up-close, and personal.

Hey Stefán, thanks for educating me in the art of tri-tip barbecue!
